I'm sure these profiles don't provide any new information about the characters, at least nothing big. I can read some Japanese, and this doesn't seem to reveal anything new. Also the full translation of Orihime's profile I saw somewhere didn't contain new information about her.
That said, I was surprised to see how tall Szayel is. When we convert 185cm to feet and inches, we get 6'1. I estimated him to be 6' (183cm) at most, probably much less, but instead he exceeded the max height I gave him. I was somewhat disappointed with Kensei's height though. Kubo drew him the same height as Shunsui (6'4, 192cm), yet he's only a little taller than Ichigo (who's 5'8.5 = 174cm), by 2 inches, that is. But, it's not a big deal.
